Mom’s Coconut Cookies — Ron Thompson

Mom’s Coconut Cookies

Blend

  • 1 cup shortening
  • 1 cup sugar
  • 1 cup brown sugar
  • 3 eggs

Sift together

  • 2 cups of flour
  • 1 tsp. baking soda
  • 1 tsp. salt

Blend all together

  • 2 cups Quick oats
  • 2 cups coconut

Roll into balls and roll into
sugar then flatten with a fork
on a cookie sheet.

Bake at 350 °F for 14 minutes.
